1 pack of pork mince, 2 meals.

 
 
620g pork mince, half price at Morrison, £1.49. I was going to make meatballs and meatloaf but had a Savoy cabbage that needed using up, so decide to try a new recipe.
 
Stuffed cabbage leaves. Take each leaf off the cabbage individually.
 

 
Your going to stuff them with a mix of pork mince and rice, plus seasoning and I added extra veggies too. Here what I chopped up and put into mine:
 
Chopped Onion
Grated Garlic
Grated Carrot
Finely chopped Mushrooms
Then 1/3 pack of pork mince and a few handfuls of cooked rice.
 

 
Start off by softening your onions, then add the garlic. Add the carrot for a few mins.
Finely chop the mushrooms:
 
 
Then add them to the pan last:
 


I wanted to make a meatloaf with the remaining minced for tomorrow evening, since I'm out of the house all day. So I separated half the mixture:
 

To go into the meatloaf.
Add your pork mince and fry off until brown, then stir through your cooked rice.
 
 


 

I added some mixed herbs, black pepper, salt and a little chilli flakes.
 

Spoon into your cabbage leaves and wrap up. Place with the seam facing downwards into a deep-ish tray:
 

 
I will be covering these with chopped tomatoes and stock and putting them in the oven for half an hour. Serving with fresh home-made garlic tear and share bread.
 
 
This is the mince and veg mix I had leftover. I combined it in a bowl with an egg and breadcrumbs and pressed it into a greased loaf tin:
 

 Meatloaf will go in the oven the same time as dinner and kept in the fridge once cooked ready for tomorrows dinner.
